  23. 2 tsp oil
  24. 1 teaspoon mustard seeds One tsp cumin seeds

  26. 2 Dry Red chillies
  27. 7-8 curry leaves

  29. 2 tsp water

Steps to make to make Dhansak with Caramelized Rice

  1. In a bowl mix
    1.5 cups pigeonpea dal(toor dal)
    2 tbsp chana da1 tbsp masoor dal
    1 tsp Udad dal
    1 tsp moong dal
    Wash well 2-3 times
    Soak for 30 mins
  2. Now in a cooker add these dala.
    Add
    1 peeled and chunkily chopped potato
    1 chopped carrot
    2 brinjals chopped in half
    1/4 th chopped bottlegourd(as I did not have pumpkin)
    1/2 bunch finely chopped Fenugreek leaves
    Add salt and turmeric powder
    Pressure cook for 4-5 whistles
    Let it cool
    Semimash it with a beater
    Remove the cubed potatoes first and keep aside
  3. In a pan add oil
    Saute 5-6 grated garlic pods
    2 chopped onions
    2 finely chopped chillies
    1 tsp grated Ginger
    Once the onions soften
    Add two large finely chopped tomatoes
    Add salt acc to taste
    Add 1 teaspoon red chili powder
    1 tsp turmeric powder
    1 tsp coriander cumin powder
    1 tsp cumin powder
    1 tsp garam Masala
    1 teaspoon dried red chilli paste
    (Option 1 teaspoon dhansaj masala instead of the last 3 ingredients)
    Cook for 5 minutes on a low to medium flame
  4. Now add the cubed potatoes left aside
    Add the semi mashed mix
    Add one fourth Cup water
    Let it blend well
  5. For tempering
    In a pan 2 tsp oil
    Add 1 teaspoon mustard seeds
    One tsp cumin seeds
    3 vertically slit green chillies
    2 Dry Red chillies
    7-8 curry leaves
  6. Pour it over the Dhansak
    Serve hot with bread or parathas
  7. Caramelized Rice
    Recipe

    In a pan add three fourth Cup sugar
    Add two tsp water
    Violet on a medium flame till the sugar turns brown and is caramelized
    Immediately added to the water in which the soaked rice is cooking
    Mix well so that the sugar solution blends with the rice
    Strain it in a seive when the rice is cooked
