Dal khichdi

- 1 cup whole moong
- 1 cup rice (I took kolam rice)
- 2 bunch spinach.(It should measure 1 cup of spinach puree.)
- 4 cups water
- 1 onion
- 1 tbsp ginger garlic paste
- 1 tomato
- Spices
- 1 tsp turmeric powder
- 2 bay leaves
- 1 inch cinnnamom
- 1 tsp Black pepper whole
- 3 cardamom whole
- 4 cloves
- 1 tsp cumin seeds
- 1 tsp hing
- to taste rock salt
- 1 tsp oil
- For tempering (tadka)
- 1 tsp mustard seeds
- 1 tsp sesame seeds
- 1 dry red chilli
- 1 tsp oil(for vegan) or ghee
Instructions to make to make Whole moong Dal Spinach Khichdi
- Wash, clean and soak moong dal for 4 hours. Keep them for sprouting
- Wash rice and keep aside for nearly 30 minutes.
- In a pressure cooker add soaked whole moong, soaked rice, 4 cups of water, turmeric and salt. Pressure cook until 3 whistles. Let it cool.down till the pressure in the pressure cooker drops.
- Meanwhile wash clean and boil spinach. cool down completely and make a.thick puree un a blender. Chop onions and tomatoes.
- In a deep pan, heat oil. Now add all the whole spices. Let them crackle and then add chopped ginger garlic. Saute them. Add onions and cook them till it turns translucent. Add tomato and cook ot till it turns mushy and starts leaving the oil from the sides.
- Add spinach puree and mix well. Add the prepared khichdi and mix well and combine all the masala to the Khichdi. Add 1 bsp of water and cook covered for 2 more minutes. Khichdi is done. You can have it as it is or can have a tadka over it.
- For the tadka, heat oil in a tadka pan. Add mustard seeds, sesame seeds, himg and dry red chill. Pour it over the khichdi. Serve with curd, salad, pickle, or papad.
