- 2 Elaichi seeds
- 10 g salt, add as needed
- 40 ml sunflower oil/Olive oil if preferred
- 1 handful freshly chopped Dhania
Steps to make to make Spicy Mutton Curry
- Preparation
Rinse Mutton pieces and place into a pot with a quarter cup of water and steam on medium heat.Add cinnamon sticks, jeera seeds, cloves, Elaichi, star aniseed and salt to the pot and stir.
Cover pot with lid and steam the meat for 40 min, until water has evaporated.
You may add another quarter cup of water should water dry out during this time.
Ensure that water has cooked out before adding oil or you can drain the excess.fat and water.
Add oil to pot and let meat brown. - Add onions and 4 chilies, stir in and braise for 10 min or until onions have caramelized with meat.
Add ginger and garlic cook for further 5 min.
Add rest of the spices, continuously stirring for 5 min.
Spices must cook in with with meat.
Add tomatoes and stir.
Cover with lid and cook for 20 min medium to low heat checking that curry is not sticking to bottom of pot.
You may add water if curry gets too dry.
Add potatoes and cook further for another 20 min or until potatoes are soft. - Turn heat down.
When potatoes are cooked add freshly chopped Dhania to top of curry and let curry stand for a few min and lower to minimum heat. - Serve with rice of your choice. Basmati rice goes well with Mutton curry and a salad of your choice on the side.
